JoEllen Patricia Carroll

July 22, 1951-February 14, 2021. Duluth, Mn. JoEllen died peacefully at St. Mary’s hospital with her family by her side. JoEllen showed incredible strength battling cancer three different times but she did not have the will to take it on again. JoEllen was known for her sassy, outspoken personality and great sense of humor. She gave so much back to her friends and family taking them in during times of need even though she herself may have been struggling. JoEllen will be remembered for her amazing skills as a cook. She thoroughly enjoyed being the camp cook for her friends at Faith Haven Apartments. JoEllen spent most of her life working in food service retiring from the AEOA Senior dining program. JoEllen is preceded in death by her longtime companion Rick “Sparky” Hanson, her parents Emelia and Frank Postal, sister Jackie Diedrich and brother Reggie Postal. JoEllen is survived by her daughter Julie and her husband Bob Dahl. Grandchildren Tysen Dahl, Joe and Annalise Dahl. Great Grandchildren Sawyer and Owen Dahl. Sisters Jerry Beckwith, Jocelyn Sharpe (Jay), brothers Bud Postal (Alice), Bob Postal (Myrna), Dick Postal (Pat), Ray Postal, Rollie Postal and many nieces and nephews. A private family celebration will be held at a later date.
