Flourless Peanut Butter Kisses

1 cup peanut butter

1 cup sugar

1 egg

1 teaspoon vanilla

Your choice of Hershey’s Kisses, chocolate stars or mini peanut butter cups

Preheat oven to 350 degrees.

Cream peanut butter and sugar; add egg and vanilla (mixture will be fairly moist). Roll into 1- to 1¼-inch balls and place 2 inches apart on an ungreased pan. Bake for 10-12 minutes, until the tops are starting to crack. Remove the pan from the oven and immediately place a Kiss/star/peanut butter cup in the center of each cookie, leaving them on the pan for about a minute before removing them to a wire rack to finish cooling.

Yield: About 2 dozen.

Coral’s Sugar Cookies

1 cup butter, softened

1½ cups powdered sugar

1 egg

1 teaspoon vanilla

2½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon cream of tartar

½ teaspoon salt

Preheat oven to 400 degrees.

Blend butter and powdered sugar; add egg and vanilla, and blend again. Add flour, baking soda, cream of tartar and salt. Mix together with your hands. Chill dough. Roll very thin to about one-fourth of an inch, cut with cookie cutters and place cookies on an ungreased cookie sheet. Bake for 6 minutes.
