RECIPE EXCHANGE: Easy Peanut Butter Bars
Sharon Johnson of Duluth sent in the recipe for Hershey’s cocoa fudge for Mr. Woodruff that the Eh? column mentioned June 28.
HERSHEY'S COCOA FUDGE
3 cups sugar
2/3 cup cocoa
1/8 teaspoon salt
1½ cups milk
¼ cup butter
1 teaspoon vanilla
Butter an 8-inch pan. Combine the sugar, cocoa and salt. Stir in the milk and cook over medium heat, stirring constantly until it forms a soft ball when put in cold water. Add butter and vanilla. Do not stir. Cool at room temperature. Beat with a wooden spoon until the fudge thickens and loses some of its gloss.
Henry and Sheri Djerlev of Hibbing has a request they think may be difficult. Years ago, there was a Greek restaurant in Duluth called “Nachios.” It was on Second or Third Avenue West just above Second Street. They loved that place. On the menu was an item called Greek Taxos (tacos), which was made with ground lamb and gyros meat they believe. Henry and Sheri are hoping someone out there has the recipe and is willing to share.

EASY PEANUT BUTTER BARS
1 white or yellow cake mix
¾ cup peanut butter
¼ cup canola oil
1 14-oz. can sweetened condensed milk
½ cup semi-sweet chocolate chips
1 cup chopped Reese’s Peanut Butter Cups or 1 cup mini peanut butter cups
Preheat oven to 350 degrees. Mix cake mix, egg, canola oil and peanut butter in large bowl with large (or hands) until it makes a crumbly dough. Press ¾ dough into the bottom of a greased 9-by-13-inch pan. Set the ¼ dough mixture aside. Pour entire can of sweetened condensed milk over pressed dough. Sprinkle chocolate chips and Reese’s on top. Remaining dough should be a little crumbly. Sprinkle what’s left over condensed milk and toppings. Most of the middle layer should be covered. Place in oven and cook for 20-25 minutes, or until edges are golden brown. Cool, cut, serve and enjoy!
