Cheese Cracklins
1 cup cheddar cheese, grated
½ cup all-purpose flour
2 tablespoons butter
water
Preheat the oven to 400 degrees. Mix the cheese, flour and butter in a large bowl with your fingers. Add just enough water to form a stiff dough. Do not over mix. Roll the dough into ¾-inch balls and place on a greased baking sheet. Bake about 15 minutes or until lightly brown. Makes about 20 appetizers.

Sweet and Salty Lemon Bars
1 – 18¼ ounce lemon cake mix
½ cup cold butter
1 egg
2 cups crushed saltine crackers (about 60)
3 egg yolks
1 can sweetened condensed milk
½ cup lemon juice
Beat the cake mix, butter and egg until crumbly. Stir in cracker crumbs. Set aside 2 cups of this mixture to use later for topping. Press remaining crumb mixture into a 9-by-13-inch cake pan, coated with nonstick cooking spray. Bake at 350 degrees for 18-20 minutes or until the edges are slightly browned. In a small mixing bowl, combine the egg yolks, milk and lemon juice. Pour over the base crust. Sprinkle on the reserved crust-base ingredients. Bake for 20-25 minutes longer. Cool on a wire rack. Cut into 24 bars. Store in the refrigerator.
