My Favorite Casserole
2 lbs. ground beef
chopped onion
salt and pepper to taste
seasoned salt to taste
1 can minestrone soup
1 can cream of onion soup
1 can cream of celery soup
1 small can of green beans
1 small can whole kernel corn
1 c. water
1/2 c. cooked carrots
1 c. cubed, raw potatoes
Brown the ground beef with chopped onion and season the meat. Combine all the ingredients together and bake at 350 degrees for 90 minutes.

Lulu's Macaroni & Cheese
1/2 lb. uncooked macaroni
2 eggs, lightly beaten
1 stick melted butter
1/2 lb. shredded colby-jack cheese
1/4 lb. shredded sharp cheddar
1/2 lb. cubed Velveeta cheese
salt to taste
1/2 c. milk
1 can evaporated milk
1 c. sour cream
1 1/2 tsp. pepper
1 tsp. sugar
1 c. shredded mild cheddar cheese for topping
Cook the macaroni until al dente. Do not overcook. Butter a 9 x 13 inch casserole. Cook and drain the macaroni and toss with butter. Mix the cheeses, eggs, sour cream, milks, sugar and seasonings. Pour into the prepared pan. Top with reserved cheddar. Bake in a preheated 350 degree oven for 45 minutes. Let sit for 5 to 10 minutes to set up.
