Beer Cheese Soup

2 cans cream of mushroom soup

2 cans cream of chicken soup

2 cans milk

1/3 pound cheese (enough for color) - Velveeta works well

1 can of beer

Mix all together and heat in pan or microwave. Serve with toast or rolls. You can half the recipe if someone is willing to drink the other ½ can of beer.

Charlie's Beef Soup

1 1/2 lbs. sirloin tip steak, chopped

a pinch of thyme

1 tsp. onion powder

2 tsp. garlic powder

1/2 tsp. pepper

1 1/2 tsp. Worcestershire sauce

2 1/2 stalks of celery, chopped

2 large carrots, chopped

3-4 cloves of garlic, pressed

7 green onions, chopped

1/2 each of red/yellow peppers, chopped

28 oz. can diced tomatoes

8 oz. can tomato sauce + half can of water

1 1/2 tsp. sugar

cilantro for topping, optional

In medium bowl, mix thyme, onion powder, garlic powder and pepper. Add chopped meat and mix until meat is well coated. In large pot add Worcestershire sauce and meat. Brown the meat. Add all other ingredients except the cilantro. Cover and simmer for 1 hour, stirring occasionally. Soup will be thick. Garnish with cilantro. Serves 4-6.

My son came up with this recipe to enter it into a 4-H Food Review contest two years ago. He was 10 at the time. He wants to be a chef when he grows up and own his own restaurant. He is always coming up with new recipes and ideas. He won first place and grand champion for this recipe. We have enjoyed making this recipe several times since.


Slow Cooker Potato Soup

1 - 28 oz. pkg. frozen hash browns, thawed

2 c. whole milk

1 can condensed chicken soup

2 tsp. canola oil

1 pkg. bacon, diced

1 small onion

2 green onions, finely sliced, for garnish

cheddar cheese for garnish

sour cream for garnish

Sauté bacon and onion in oil until crispy. Reserve ½ cup. Combine soup, potatoes, milk, and remaining onion mixture. Heat on low for 6-7 hours or on high for 3-4 hours in a slow cooker. Serve in bowls and garnish with green onion, cheddar cheese, and sour cream.
