Wild game recipe: Duck soup

1 lb. skinless, boneless duck breast meat, cut into 1-inch pieces ½ c. minced sweet onion 4 links cooked mild breakfast sausage, diced 1 stalk celery, diced 2 c. peeled ¼-inch diced sweet potatoes

1 lb. skinless, boneless duck breast meat, cut into 1-inch pieces

½ c. minced sweet onion

4 links cooked mild breakfast sausage, diced

1 stalk celery, diced

2 c. peeled ¼-inch diced sweet potatoes

2 green apples — peeled, cored and diced

2 c. chicken stock

3 T. chopped chives

salt — a pinch or three

black pepper

4 T. olive oil

½ c. dried cranberries

1 c. heavy cream

2 c. milk

2 T. flour

Put the first 12 ingredients in a crock pot on low. Stir every two hours. After four hours, add the last 3 ingredients. Cook on low for two more hours until thick and ready to serve.
