Maids of Honor

1/2 c. shortening

3/4 c. sugar

2 eggs

2 c. flour

1/4 tsp. salt

2 tsp. baking powder

1 1/2 c. raspberry jam

1/2 c. blanched, chopped almonds

sweetened whipped cream

Cream the shortening and sugar. Add the eggs. Beat until light and fluffy. Stir in the flour, salt and baking powder which you have already sifted together. Form small balls between hands and pat into a well-greased patty or into tins. Make a deep hole in the center by pressing dough up around the edges. Combine the jam and nuts and fill in the holes in the dough with this mixture. Bake in a 450 degree oven for 10 minutes. Before serving, when cool, top with sweetened whipped cream. Makes 18.

Crescent Coffee Ring

10 oz. jar maraschino cherries, drained and sliced in half.

¾ c. chopped walnuts

2 - 8 oz. tubes of Pillsbury refrigerated crescent roll dough

1 - 8 oz. pkg. cream cheese

½ c. sugar

1 tsp. almond extract.

Frosting:

1 c. powdered sugar

1 T. milk

1 tsp. almond extract

Set aside several nicely-shaped cherry slices and 2 tablespoons of chopped walnuts to decorate top. Unroll both tubes of crescent roll dough on waxed paper to form a 15 x 13-inch rectangle. Pinch seams together to seal. Cream together cream cheese, sugar and 1 teaspoon of almond extract. Spread evenly over dough, staying 1/2 inch from the edges. Sprinkle all but the reserved cherries and chopped walnuts evenly over the cream cheese layer. Carefully roll up dough lengthwise onto an ungreased cookie sheet, placing seamed-side down. Pinch outer edges together to close seams and gently curve dough slightly on cookie sheet to form half-circle. Try to keep all pinched seems on the dough from opening up while rolling and curving. Make 5 or 6 shallow slits in top of dough with a sharp knife. Bake at 350 degrees for 30 to 35 minutes. Cool completely. For the frosting, combine the milk, 1 teaspoon of almond extract and powdered sugar to make a glaze. Drizzle the glaze generously over the top of the coffee cake. Arrange reserved cherries and sprinkle reserved chopped nuts over the top to decorate. Cut into slices to serve as coffee cake.
