It sounds like a challenge on a reality TV show: Open a new bar and restaurant in less than two months.
If it had been a contest, Rick Boo and his team would have done pretty well. In mid-August, Mark Pearson officially closed Viking Legends after a little over a year in business. Just two weeks into October, Carmody 61 opened in the same building along Minnesota Highway 61 in Two Harbors.
“We were looking to expand and thought Two Harbors would be a great place to go,” Boo said. He is part-owner of Carmody Irish Pub and Brewing in Duluth and this is the pub’s first venture outside of the city.
Boo said Carmody 61 will have a different atmosphere than the establishment in Duluth. The emphasis is less on an Irish pub-style atmosphere and more on the food. They’ll still offer the beers created at Carmody in Duluth, but they’ll also have a full menu. At its core, however, is a friendly establishment where everyone can enjoy themselves — just like their Superior Street location.
“Everyone should just feel comfortable walking through the door,” Boo said.
Although the business opened fairly quickly, there was a lot of legal work going on behind the scenes. Debts accrued by the previous owner presented some hurdles and Two Harbors City Council had to wade through the legal tangles associated with that debt so a liquor license could be issued, Boo said. The problems delayed the project a bit but most of the issues were resolved quickly.
“Everybody worked really well with us to get through that,” Boo said.
With more of a family atmosphere, Boo doesn’t expect to compete with The Pub in downtown Two Harbors. He’s enjoyed a few brews there and is pleased to join the neighborhood.
“(That’s) a great little pub downtown. I really enjoy that place.”
Carmody 61 will celebrate its grand opening today beginning at 3 p.m. Live music will start at 8 p.m. and there will be food and drink specials all day.
