Prime Rib Rolled Meatloaf

3 lbs. ground beef or ground sirloin

3 eggs

2 1/4 c. dry oatmeal

2 pkgs. dried onion soup mix

1/4 c. milk or more

pepper to taste

1 - 16 oz. pkg. thinly sliced smoked ham

2 pkgs. deli thick Swiss cheese

Mix the ground beef, eggs, oatmeal, soup mix and milk well and drop onto a sheet of freezer paper wrap. Pat this mixture to form a rectangle approximately 16 to 18 inches by 22 inches. Sprinkle pepper on this formation but don't use salt since the soup mix has enough salt in it. Add the smoked ham to the meat formation followed by the Swiss cheese. Note: Thin sandwich cheese does not work since it melts too much and disappears into the meatloaf. Take the shorter side of the freezer paper, lift and roll the entire meat item until you’ve formed a meat log. The log is made with at least three rolls of paper. When the log is complete you may need to take the extra meat from the ends to do some patch work, covering and poking in any cheese or ham that has found its way out of the rolling procedure. You want the piece of meat to look secure and tucked. Bake on a broiling rack that has been sprayed with the bottom pan covered with aluminum foil for easy clean up. Using a broiling pan allows the fat to drip off the meatloaf and leaves the pieces brown and in one piece. Using a regular pan will not work well as a sealer and you will find your "log" split open, looking like a mess. Due to the size, bake at 350 degrees for at least 2 to 2 1/2 hours. Once you’ve removed it from the oven, let cool before cutting. When it is cut, you will see a pin wheel effect made from the ham and Swiss cheese.

I have had guests anticipating their second piece before eating their first, only to learn they are too full for a second piece. This recipe may scare you at first, but it is not difficult to prepare.


Broccoli Pie

2 pkg. crescent rolls

1 egg

1 c. milk

2 T. flour

5 to 6 c. steamed broccoli flowerets (fresh or frozen)

1 1/2 lb. hamburger

onion, diced to taste

1 1/2 tsp. salt

1 1/2 tsp. pepper

5 oz. cream cheese

1 c. shredded cheese

Preheat the oven to 350 degrees. Take one package of crescent rolls and press into a pie dish forming a crust. Cover the entire pie dish with the dough and pinch together seams of the triangles. In a bowl, beat the egg. Add the milk and flour. Set aside for use later. If using fresh broccoli, cut into pieces and place in a steamer and steam for 9 to 10 minutes. You can substitute frozen, just follow the package directions. Brown the hamburger and onion. Season with salt and pepper. With the hamburger on the stove over low heat, add the cream cheese and mix it in as it melts. Add the egg mixture to the hamburger. Stir until a sauce is formed with the cream cheese. Once the hamburger mixture is creamy, add the steamed broccoli and shredded cheese. Mix well and pour into a pie dish. Take the second package of crescent rolls and from a crust on top. Bake the pie for 30 minutes. The crust should be golden brown.
