Best-ever Italian Meatballs
1 lb. 90 percent lean hamburger
1/2 lb. ground pork
1 T. Kosher or sea salt
1/2 tsp. ground black pepper
2 to 3 cloves minced garlic
2 large eggs, lightly beaten
1 c. grated Parmesan
1 1/2 c. fresh bread crumbs
1 to 1 1/2 c. water
1 to 2 tsp. dried oregano
1 tsp. dried basil
1/2 tsp. red pepper flakes
1 T. chopped parsley
Combine all the ingredients in a large bowl trying not to overwork the meat. Preheat the oven to 375 degrees. Line a sided cookie sheet with parchment paper or foil. Use a 4 oz. ice cream scoop to equally portion the meat. Gently roll into balls. Place on the pan. Bake for 40 minutes. Remove from the oven and place in your favorite marinara sauce. Meatballs can be frozen.

Garlic Mashed Potatoes
5 lbs. baby red potatoes
3/4 lb. butter at room temperature
1 c. grated Romano cheese
2 T. oregano
1 T. salt
1/4 c. chopped garlic, about 10-12 cloves
Cook potatoes with skin on until tender, drain well and place in large mixing bowl. Add all ingredients and mix with a hand mixer. Mix well and serve at once.

Grace’s Scones
2 c. flour
½ tsp. salt
¼ c. sugar
2½ tsp. baking powder
6 T. cold butter
2/3 c. milk
½ c. walnuts
¼ c. white chocolate
¼ c. Craisins
Sugar for topping
Preheat the oven to 425 degrees. In a large bowl, mix the flour, salt, ¼ cup of sugar and baking powder. Cut in the cold butter until it resembles bread crumbs. You can use a knife at first and then use your fingers to get the last bits small enough. Mix in the milk, walnuts, white chocolate and Craisins. Mix lightly until just combined. Turn out onto a floured board. Shape into 1-inch-thick round on cutting board (add a little flour below to prevent sticking). Cut into pie shapes and place each piece 1/4 inch apart from each other on an ungreased cookie sheet. Sprinkle each triangle with sugar. Bake for 10 minutes. Scones should be lightly browned on the corners and crumbly in the middle.
