GRILLED SALMON

fat-free ranch dressing

bacon bits

blue cheese crumbles

salmon fillets

diced tomatoes

Combine the dressing, bacon bits and blue cheese crumbles to form a sauce. Place the salmon fillets, skin side down, on the grill and cover with the sauce. Grill until done. Top with diced tomatoes before serving.

FISH BURGERS OR CAKES

canned or fresh salmon, cut into very small pieces

egg

Panko bread crumbs

diced onion

diced garlic

salt to taste

pepper to taste

hot sauce of your choice

Combine all the ingredients and form patties. Sprinkle Panko bread crumbs on top of the patties. Fry in a skillet and serve on a grilled bun.

SALMON DIP

1 to 2 lbs. smoked salmon

3 – 3 oz. pkgs. Philadelphia fat-free cream cheese

quart-size jar of baby dill pickles

1 onion, diced

Sriracha hot sauce to taste

1-quart jar Thousand Island dressing

Combine and chop all the ingredients in a food processor. Chill before serving.
