The Duluth Grill has been making quite a name for itself in recent years. The restaurant’s gardens and its ratatouille recipe, along with owner Tom Hanson talking about gardening, are featured in the “Tastes of America” section of the publication.
We won’t print the whole recipe — although you can find it in the Relish insert that came with your Wednesday DNT — but here’s a short recap: You need onions, bell peppers, zucchini, eggplant, olive oil, salt and pepper for roasting, and tomatoes, olive oil, garlic, a can of crushed tomatoes, salt, oregano, basil, parsley, red pepper flakes, Kalamata olives and goat cheese for the sauce.
It’s a classic summer dish.
