Swedish Meatballs

1 lb. ground beef

1 egg

½ c. oatmeal or cracker crumbs

1 pkg. onion soup mix

1 can cream of celery soup

2-3 c. water

1 tsp. Kitchen Bouquet

salt and pepper

Pam cooking spray

Mix ground beef with egg, oatmeal, ½ package of onion soup mix, salt and pepper. Mix well with your hands. Spray bottom of pan with Pam cooking spray. Form mixture into meatballs. Place in pan and bake in oven for 15-20 minutes at 400 degrees. Drain fat. Mix water, remaining onion soup mix, celery soup and Kitchen Bouquet. Pour over meatballs. Bake covered for 1 hour at 350 degrees. Serve over buttered noodles or mashed potatoes.

Vandergone Chicken

boneless chicken breasts

8 oz. Swiss cheese

1 ½ c. Pepperidge farm bread crumbs

1 can cream chicken soup

¼ c. milk

½ c. melted butter

Place chicken breast in a greased 9x13-inch pan. Top each breast with a slice of cheese. Pour soup combined with the milk over the chicken. Sprinkle crumbs over all. Drizzle entire pan with melted butter. Bake at 350 degrees for 45 minutes covered and then an additional 15 minutes uncovered.

Gail’s Busy Day Casserole

3 lbs. hamburger

1 large onion

2 sticks celery

salt and pepper to taste

1 large can whole kernel corn

2 cans cream of mushrooms soup

2 cans cream of chicken soup

4 soups cans of water

1 large pkg. egg noodles

2 large bags of potato chips

Brown the hamburger, onion, celery, salt and pepper in a large baking pan on the stove and drain the grease. Add the corn, cream of mushroom soup, cream of chicken soup and water. Boil the egg noodles, cooking until halfway done. Stir into the mixture being careful not to break the noodles. Crush the potato chips and add to the top. Bake for one hour at 350 degrees.
