Easy and Quick Nachos

1 large bag Doritos nacho cheese chips

cheddar cheese, grated

1 small onion, chopped

1 green pepper, chopped

1 tomato, chopped.

Mix tomato, green peppers and onion together in a bowl. Place one layer chips on a glass (8-10 inch) dinner plate. Sprinkle on a layer of the onion/green pepper/tomato mixture. Cover with a layer of cheese. Microwave on high for approximately 2 minutes or until cheese has melted. Serve immediately.

Jalapenos Poppers

1 - 27.5 oz. jar of whole jalapenos

8 oz. pepper jack cheese

1 lb. bacon

sour cream

fresh cilantro

Drain jalapenos, cut off the stem end and clean out all membrane and seeds. Cut 1/3" square strip of the pepper jack cheese the length of the jalapeno. Stuff cheese in jalapeno. Cut jalapeno in half. Cut a strip of bacon in half. Stretch and wrap the bacon around the jalapeno and secure with toothpick. Bake at 400 degrees for 45-60 minutes or until bacon is done. Serve with sour cream, mixed with fresh cilantro.

Celebration Punch

2 pkg. Kool-Aid (raspberry or cherry)

2 c. white sugar

2 quarts water

2 quarts ginger ale

2 - 46 oz. cans pineapple juice

1 to 2 lemons, sliced

Combine all the liquid ingredients. Slice the lemons and arrange in the bottom of a ring mold. Pour enough punch over the lemons to hold the lemons in place and freeze. When frozen solid, add more punch to fill the mold. This adds a bit of flavor as well as creating an appealing presentation. Serves 50.

Pretzels with Punch

1 - 30 oz. bag pretzels

1 - 12 oz. bottle of Orville Redenbacher's butter flavored oil for popcorn

1 pkg. Hidden Valley ranch dressing (dry)

½ to 1 tsp. garlic salt

½ to 1 tsp. onion powder

Mix all ingredients in a large Ziploc bag. You might need two bags. Toss and do this for a couple days to let the pretzels absorb oil mixture. Great at any party or get together.
