Betty’s Cookies

1 cup of butter

½ cup of granulated sugar

½ cup brown sugar

1 egg yolk

1 cup all-purpose flour

½ teaspoon of baking soda

1½ cups of oatmeal

Dark chocolate chips, melted

Cream together the butter and sugars, add the egg yolk. Combine the all-purpose flour and baking soda, add it to the butter and sugar mixture. Mix in the oatmeal. Refrigerate the dough until chilled.

Preheat oven to 350 degrees.

Roll dough into small balls and bake on a parchment paper-lined baking sheet for 10 minutes. After the cookies have cooled, dot with melted chocolate in the center.

Madeline’s Date Refrigerator Cookies

1 cup butter

2 cups brown sugar

2 well-beaten eggs

1 cup chopped dates

1 cup chopped nuts

3½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

Cream the butter and brown sugar. Add the eggs. Add the dates and nuts. Gradually add dry ingredients to creamed mixture. Shape into rolls and wrap in waxed paper. Place in refrigerator overnight.

Preheat oven to 400 degrees. Slice dough thin and bake for 5-7 minutes. Cool.

Baker’s note: This recipe was found in my mother’s recipe box. It probably dates from the 1940s. It is easy and one of my favorites.
