Chocolate Chip Cookies

½ cup canola oil

½ cup butter

¾ cup brown sugar

¾ cup granulated sugar

2 eggs

2¼ cups all-purpose flour

¼ teaspoon salt

1 teaspoon baking soda

1 teaspoon vanilla

1 cup chocolate chips

1 cup butterscotch chips

Preheat the oven to 375 degrees.

Mix the oil, butter, and sugars together. Add the eggs and combine. Add all-purpose flour, salt, baking soda and vanilla. Add the chips. Lightly grease cookie sheets. Bake for 10 to 15 minutes.

Note: Instead of chocolate and butterscotch chips, you may add macadamia nuts and 2 cups vanilla chips.

Mom’s Chocolate Swirl Cookies

1 cup sugar

½ cup butter or margarine

2 eggs

2 – 1-ounce squares unsweetened chocolate, melted and cooled

1 teaspoon vanilla

2 cups all-purpose flour

1½ teaspoon baking powder

½ teaspoon salt

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon ground ginger

¼ teaspoon ground allspice

additional sugar for top

Cream sugar and butter or margarine until light and fluffy. Add eggs, melted chocolate and vanilla; beat well. Stir all-purpose flour, baking powder, salt, baking soda, cinnamon, ginger and allspice together thoroughly. Stir into creamed mixture a little at a time, mix well. Chill thoroughly.

To form swirls, roll about 2 teaspoons of dough on lightly floured board with hands to form a rope about 9 inches long. Coil into a spiral shape and place on ungreased cookie sheet. Sprinkle with additional sugar. Bake in a preheated 350 degree oven for 10 minutes. Makes about 5 dozen.

Sugar Cookies

1 cup granulated sugar

1 cup powdered sugar

1 cup margarine

1 cup oil

2 eggs

4 cups all-purpose flour

1 teaspoon vanilla

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon cream of tartar

Preheat the oven to 375 degrees.

Cream the granulated sugar, powdered sugar, margarine and oil. Add the rest of the ingredients. Mix well, chill dough. Form balls and roll in granulated sugar. Press down with glass. Place cookies in oven and turn down the heat to 350 degrees as soon as cookies are put in oven. Bake for 10-12 minutes.

Once cooled, melt chocolate almond bark. Dip half of each cookie in the melted chocolate. When set, melt white almond bark and dip other half in the melted almond bark.
