Qdoba opens next week in Duluth
Back in May, indications were that Qdoba Mexican Grill would open July 21 at the Shops at BlueStone in Duluth.
But it won’t be a typical business day for the fast-casual eatery’s first entry into Northeastern Minnesota at the BlueStone Commons development along Woodland Avenue near the University of Minnesota Duluth.
It’ll be one for charity.
The grand opening will run from 4-9 p.m. July 21 with customers given the freedom to “Pay What You Want” for any menu item. All proceeds will go to Mentor Duluth, a program that helps guide youth ages 5 to 18.
The restaurant will sport a “unique-to-Duluth design,” Qdoba spokeswoman Meg Prejzner said. But its menu will be standard Qdoba fare. It will include Qdoba’s San Francisco-style burritos, which are larger with more rice and other ingredients, as well as the chain’s tacos, Mexican gumbo, savory quesadillas, tortilla soup, mango salads and more. At Qdoba, diners can hand-select fresh and spicy ingredients for their entrees.
Regular business hours begin July 22. Hours will be 7 a.m. to 11 p.m. Monday through Saturday and 7 a.m. to 10 p.m. Sundays, with Qdoba also offering a full breakfast menu.
Founded in Denver in 1995, the chain has grown to more 600 restaurants in 47 states and Canada.
Qdoba’s opening follows the opening a month ago of competitor Chipotle Mexican Grill at the Miller Hill Mall in Duluth. That opening also marked Chipotle’s first location in Northeastern Minnesota.
